Sweet & Spicy Vegan Pumpkin Soup

It’s Fall Y’all!

The beautiful season of autumn is upon us and my favorite way to celebrate her is with soup!

This sweet and spicy vegan pumpkin soup is a great way to celebrate the season while warming your heart and delighting your taste buds. Being that it is a hearty soup, it can be served on its own, or paired with rolls or a sandwich (a nice warm grilled cheese is my recommendation).

This soup takes about 5 minutes to prep and 20 minutes to cook, making it a go-to meal for even the busiest days!

Feel free to add more or less cayenne pepper based on your preferences.

Sweet & Spicy Vegan Pumpkin Soup

Prep time: 5 minutes

Cook time: 20 minutes

Makes 4 cups of soup

Ingredients:

·         2 15oz cans of 100% pure pumpkin solid packed

·         2 cups unsweetened coconut milk

·         2 tbs light brown sugar

·         ¾ tsp cayenne pepper

·         2 tsp salt

·         ¼ cup maple syrup

 

Step 1: Mix all ingredients together in a large soup pot

Step 2: Cover and place on medium-low heat

Step 3: Heat through (about 20 minutes) and serve
